Growing up in Nairobi Kenya the Papads were always homemade and always delicious. We made around 400 at each session. These sessions were a full neighborhood event. Each 400 were cooked for one family at a time. My mum would involve all of the families on our little development. They would start at 7.am pounding out plenty of whole spices to mix into the dough. When the dough was just right the ladies would begin to roll out the Papads. The children would then take each Papad from the rolling pin and lay out on immaculate white sheets to dry in the sun. When the first side had dried out the children would turn them over and leave until it was crisp and dry. We would finish at approximately 4 o’clock, we had spent the day outdoors in the sun, working and having fun together. One family had their Papads for the next few weeks. If they could last that long ?? Delicious.
